Born: Australia
Home: The Westin Kuala Lumpur School: University of Queensland Inspiration: Chez Panisse (the birthplace of California cuisine) Tools: I would say a mortar and pestle. Invaluable. There is a kind of symbiotic, ergonomic relationship with what you produce. It’s the perfect tool. Timeless. Other Passions: As simple as walking down the street or my family. What makes for success: Ultimately, I look for inspiration through the language of the ingredients, or sometimes teach the ingredients to speak new languages. We are often speaking a new language. |
